You can store fried noodles for 10 – 15 days. Put them on soup, stews, or even curries as a crunchy topping.
Refrigerate the sauce for one week after transferring it to an airtight container. Before serving, reheat in a microwave or a saucepan on the stove to the desired temperature.
For two to three days, the crispy fried noodles keep their freshness at room temperature in an airtight jar.
The final assembled chopsuey shouldn’t be kept in storage because the fried noodles will soften.

2. The noodles should be drained, transferred to a kitchen towel, and air dried so that any remaining moisture either evaporates or is absorbed. Add some corn flour after the noodles have dried, then set aside. Noodles are deep-fried in hot oil until golden brown. Remove from oil, then place on a plate covered in tissue.
3. In a wok or kadai, cook the garlic and ginger in a tablespoon of oil over high heat until fragrant. Add onions and saute for 1-2 minutes. Add cabbage, bell peppers, carrot and beans. Saute on high for 2-3 minutes while stirring continuously.
4. Combine by adding ketchup, red chili sauce/sriracha, salt, pepper, soy sauce, and sugar.
5. Add the corn flour to the wok along with a couple tablespoons of water. Stir to combine and ensure there are no lumps.
6. Add 1 ½ cups of water and mix to combine. The sauce should be heated to a boil before being simmered.
7. Cook for 3-4 minutes or until desired thickness is achieved. If you prefer a different consistency, you can add more water.
8. Serve the gravy hot over fried noodles!

22. Shred or finely chop the veggies. To chop the vegetables, either use a food processor or a knife. You’ll need 12 cup grated carrots, 12 cup grated cabbage, 13 cup thinly sliced capsicum, 14 cup chopped spring onions, and 12 teaspoon each of finely chopped ginger and garlic.
23. Take 3 tablespoons of tomato ketchup, 1 tablespoon of soy sauce (I used naturally fermented soy sauce), and 1/2 tablespoon of either sweet red chili sauce or sriracha sauce and combine in a small bowl.
24. Mix the three sauces very well with a spoon.
25. Add 2 tablespoons of corn flour (corn starch) and 2 tablespoons of water to another small bowl.
