When I was in my early 20s and attending college in the United S. I received an invitation to a dinner party at the home of a Korean professor. At his house, he was providing care for all the students who were native Korean speakers and Korean majors.

His wife, who was a fantastic cook and taught Korean at the university, was more well-liked by the students. I was won over when she demonstrated how to prepare japchae, the legendary Korean glass noodle stir-fry.

The fact that her recipe for japchae noodles was so much simpler than my mother’s (which I still adore) made it even better.

Every Korean feast table, including those at weddings, birthday celebrations, and other life-celebrating occasions, features the dish jappae. There may be some individuals out there who have never tried japache, but once they have, they can’t stop eating it!

  • What is japchae?

    Japchae (잡채) literally means “mixed vegetables. However, Korean sweet potato starch noodles (dangmyeon, ), also known as glass noodles, are the primary component of this traditional dish. A must-have dish for traditional holidays and special occasions is japchae.

    Different ingredients are used in numerous variations, including Spicy Seafood Japchae and Kongnamul Japchae.

    When making traditional japchae, thin strips of beef (or pork) and various vegetables go well with the chewy, springy noodles in a slightly savory, sweet sauce. It’s also common to add an egg garnish (jidan, 지단). Sometimes, I also sprinkle with some finely chopped pine nuts.

    Simply leave out the meat and increase the amount of mushrooms or other vegetables to make vegan japchae. Pan-fried tofu is also a good substitute for the meat.

    Serve it as a starter, side dish, or as the main course over a bed of rice.

    Where to buy Korean glass noodles?

    Most Korean markets and Asian markets sell Korean sweet potato noodles. Make sure to check they are Korean dangmyeon noodles. You can also purchase dangmyeon via online stores easily. Look for precut noodles if you want to avoid the long strands of noodles. Or, you can still use the regular noodle bundles and then just cut them with a pair of scissor

    Korean glass noodles are completely gluten-free since they are made from sweet potato starch. To make japchae a gluten-free dish, make sure to use gluten-free soy sauce when seasoning the noodles.
