For the Ricotta Cheese Layer:
- Full-fat ricotta cheese is my preference for a rich, velvety, and creamy cheese layer.
- Freshly grated Parmesan cheese: To keep the cheese layer firm but spreadable, I increased the amount of grated Parmesan cheese in place of the eggs in this recipe.
- Herbs and seasonings: The cheese layer is flavored with salt, pepper, and dried parsley flakes.
- Gluten free lasagna noodles: as discussed above!
- Shredded mozzarella cheese: Can’t have lasagna without it.
How to Make Lasagna Gluten Free
I’m going to let you in on the #1 secret for making lasagna gluten free: use gluten free lasagna noodles. All I changed to make my family’s favorite lasagna recipe gluten-free was that one substitution.
Although it might seem obvious, gluten-free lasagna noodles weren’t readily available in my neighborhood grocery stores until a few years ago. Fortunately, gluten-free pasta is now widely accessible, and there are numerous options for GF lasagna noodles.
The Best Gluten Free Lasagna Noodles
I’ll start with my go-to gluten-free lasagna noodle, which I use and feature in this recipe. I’ll also include some additional gluten-free lasagna noodle options:
- Jovial Gluten Free Brown Rice Lasagna Noodles are good. I enjoy brown rice lasagna noodles. They withstand being parboiled and then baked well, and they have a nice chew to them.
- No-Boil/Oven-Ready Noodles: I used Barilla Gluten Free Oven Ready Lasagna Noodles for the first gluten-free lasagna I made, which I mentioned previously. It was a fantastic lasagna. My lasagna turned out partially cooked the second time I used them; some of the noodles were soft, and others were hard. The third and final time I used them, it was the same situation. Personally, I feel no boil lasagna noodles yield inconsistent results.
- Fresh Lasagna Sheets: I made a gluten-free lasagna that was absolutely delicious using Capello’s Gluten Free Lasagna Sheets. However, fresh lasagna products are pricey, so I couldn’t afford to pick them for our weekly lasagna night.
For the best texture and most consistent results, I suggest using Jovial’s Brown Rice Gluten Free Lasagna Noodles in my gluten-free lasagna recipe. Before adding them to the lasagna, you will parboil (or boil until partially cooked) them.
