Here’s how to do it in two simple steps:
  1. Place a skillet over medium-high heat. Add a drizzle of olive oil.
  2. When the skillet is hot (flick water in, it should sizzle), add in the sweet potato noodles. Toss the noodles lightly with pasta tongs and cook for 5-7 minutes or until cooked through.

Because most zucchini noodle recipes require a large skillet to make even enough for two people, roasting them first makes sense. How to Make Sweet Potato Noodles

What you will need:

  • 2 medium sweet potatoes (see notes below)
  • 1 tbsp extra virgin olive oil
  • pinch of kosher salt
  • 10 inch skillet
  • Select sweet potatoes that are thinner and roughly the same size as zucchini. Sweet potatoes that are thinner will make spiralizing much simpler. Larger potatoes must be cut in half lengthwise in order to fit through the spiralizer. You will need two medium-sized sweet potatoes (which produce 4-5 cups of sweet potato noodles) for this batch of sweet potato noodles. Peel, wash, and dry your sweet potatoes once you’ve made your selection.

    Use your spiralizer to sprialize the sweet potatoes. I used a hand-held sprializer, which was slightly difficult to use for a sweet potato. If you don’t own a spiralizer, you may use a julienne peeler to create sweet potato noodles. Hold the potato in one hand and slowly pull the julienne peeler down the potato with your other hand. Repeat this process until the entire sweet potato is “peeled”. NOTE: using a julienne peeler is a tedious process but it can be done.

    Cook the sweet potato noodles. In a 10-inch skillet (I used cast iron, but you could also use stainless steel), add 1 tbsp of extra virgin olive oil, and heat over medium-high heat. With tongs, combine the spiralized sweet potatoes with the olive oil. To avoid the potatoes burning or getting stuck on the skillet bottom, keep tossing them with the tongs every few seconds. Do this for 5-10 minutes. Your preferred noodle texture will determine how long to cook the noodles. If you love a little crunch, cook for 5 minutes. If you prefer soft noodles, cook for 10. To determine whether a noodle has reached your preferred texture, taste one.
