As someone who once worked in a Chinese restaurant, I can tell you that we used to make vermicelli, which are essentially thin rice noodles, by soaking the raw noodles in cold water for about an hour, or until they became flexible. After that, we can keep this soaked but raw noodle in the fridge for a few days by covering it with plastic wrap. They dont need to be oiled. We simply cook it by immersing it in boiling water for a minute or so, and then preparing it as needed. It practically takes no time to cook at all with the soak.

Maybe you could use this technique in the future to soak your noodles beforehand. After then, you can use how much of that batch of noodles you need and store the remainder for another time. Plus itll save on cooking time.

Simply store the leftover rice noodles in the fridge by placing them in a zip-lock bag. When you’re ready to use them, about the following day, place as many as you like in a heat-resistant bowl and cover them with boiling water. After draining them right away, place them in the serving bowl with fresh cilantro and leftover Thai peanut sauce. Toss them lightly. Fast delicious hot lunch.

You can just toss the chilled noodle clusters into hot water to separate them for use in soup. Soft noodles are the end product, which might not be to everyone’s taste.

What If My Rice Noodles Are Too Hard?

Your noodles might not have been soaked for long enough if they are overly firm. Consider soaking them for up to 20 minutes, or longer.
