How Long To Cook Homemade Noodles In Broth

Tasty. Rich, flavorful, and eggy, the noodles are enhanced by a delightful superfatted broth. This creates an amazingly rich side dish. After the holidays, you weren’t going to have your cholesterol checked, were you?

Nostalgic. This is a genuine classic straight out of my grandmother’s files.

Family Friendly. This is a fantastic recipe to involve your children in holiday cooking and preparation. Every Thanksgiving, my grandmother would save the “pinwheels” for her grandchildren to unfold before the meal, and we were always honored to assist!

  • All-purpose flour. This is the main ingredient in the noodles.
  • Salt. This brings out the flavor of the broth and the noodles.
  • Eggs. This gives the noodles more flavor and richness while also keeping them cohesive.
  • Milk. This thins the noodle mixture.
  • Butter. This adds richness and flavor to the broth.
  • Chicken broth. Noodles absorb the flavor of the chicken broth as they cook. A flavorful broth is important.
  • Chicken fat. This adds richness and flavor to the broth. In a pinch you can substitute butter.
  • These noodles were around long before food processors and pasta makers were fancy kitchen appliances. So no special tools are needed!.

Step by Step Directions (Video at End)

Mix together the flour and a small pinch of salt in a big bowl. Add the beaten egg, milk, and butter. Mix until mostly blended, then drop mixture onto floured surface.

Once the blending is complete by hand, knead for five minutes or until smooth.

Roll out to a thickness of 1/8 or 1/4 inch on a floured surface. After finished, lightly flour the dough on both sides to make it less sticky.

Roll up the dough into a long cylinder, starting at one end.

Slice the “wheels” all the way through the cylinder’s length.

Before cooking, unroll the “wheels” and give the noodles at least 15 minutes to air dry.

In a large pot, heat the broth, salt, and chicken fat. Once boiling, add the noodles. Cook until done, approximately 5 minutes.

Tips For Making Homemade Noodles:

  • Although I prefer to use einkorn flour for this, you can use all-purpose instead.
  • Don’t knead the dough too much. Work the dough just enough to bring it together and make it smooth. Overworking can cause the noodles to be tough.
  • Allow the dough to rest 5-10 minutes before rolling out. For whatever reason, rolling out the dough is made simpler when it has rested.
  • This dough can be prepared earlier in the day, sealed tightly, and stored in the refrigerator for a few hours.
