The development of processed cheese, where emulsifying salts stabilize the product and extend its shelf life, was a necessary step toward the creation of a packaged macaroni and cheese product that could withstand shelf life. Despite not having invented processed cheese, James Lewis Kraft, a Chicago resident originally from Fort Erie, Ontario, started his own cheese company in 1916 after obtaining a patent for a single processing technique. During the Great Depression, a St. Salesman Grant Leslie[4] of Dundee, Scotland[citation needed], based in Louis, Missouri, came up with the idea to package and sell macaroni pasta and cheese together. He started by using rubber bands to secure grated cheese to pasta boxes. [3] In 1937, Kraft introduced the product in the U. S. and Canada. [1] The product’s success was largely due to the timing of its release: during World War II, there was a large market for the product, which was regarded as a filling supper for families, due to the rationing of milk and dairy products, the rise in vegetarianism, and the increased employment of women. Its ten-month shelf life was appealing at a time when many Canadian homes lacked refrigerators. Additionally, customers could get two boxes for every food ration stamp. The original box was primarily yellow. 50 million boxes were sold during the war. [5] In 1954, the box’s primary color changed to blue, and it was subsequently used in an advertisement encouraging kids to ask for “The Blue Box.”

In 1975, a version featuring noodles shaped like spirals made its debut, and Velveeta Shells [5] In 1999, Easy Mac, a single-serving version that only needed water to prepare, was released. [6] In 2006, Easy Mac Cups were released, and the cheddar and white cheddar varieties transitioned to organic macaroni. In 2007, the noodles switched to 50 percent whole grain. [5].

Macaroni & Cheese Crackers also debuted in 2007. 2008 saw the discontinuation of the crackers due to their failure to meet company goals. In 2010, the Homestyle Deluxe sub-line was introduced, offering three flavors: Old World Italian, cheddar, and four-cheese sauce. [5].

Yellow 5 and Yellow 6 were once added to Kraft Macaroni and Cheese sold in the US to give the dish a brighter color. Food containing Yellow 5 is required to have a warning label in Europe that reads, “This product may have adverse effect on activity and attention in children.” None of the European varieties were produced in 2014 using artificial dyes.

Kraft declared in November 2013 that new shapes of pasta would be available for kids in the S. would contain six extra grams of whole grains, less sodium and saturated fat, and no longer include Yellow 5 and Yellow 6.

It was announced in April 2015 that after January 2016, those modifications—which included doing away with artificial preservatives—would apply to the entire line.
