When I was changing channels last year, I saw QVC’s deal of the day. It was a pressure cooker. I listened to the entire presentation because pressure cookers had long caught my attention.

I polled my friends on Facebook after the presentation to see if anyone had a pressure cooker and what they thought of it. Since every review was favorable, I decided to order it. In addition, I was able to get it in my favorite color, green!

Can I just say, how much I love this appliance?

I’m not super adventurous, and mostly cook the same types of meals in it: Boiled eggs– 18 at a time and they peel like a dream, Chicken wings, baby back ribs, but mostly, I’ve been using it to pressure cook my chicken in bulk. (Making yogurt is next on my list.)

I go in and stock up whenever the chicken breasts at our neighborhood organic grocery store go on sale. In the past, I used a slow cooker to prepare all the chicken. The chicken breasts always seemed to be on the dry side even though I used a digital thermometer to determine when they were done. (edible, but a tad dry).

The chicken comes out so much better in the pressure cooker for whatever reason (perhaps the pressure keeps the juices in the chicken?)

How to Cook Boneless Chicken Breast in the Pressure Cooker

  • Add chicken to the cooking pot with a cup of water and plenty of salt and pepper. (I usually do about 5 lbs at a time. If you do more, you may need to increase your cooking time.)
  • Set the pressure to high and cooking time to 13 minutes.
  • Do a natural pressure release. Remove Chicken from pot and allow it to rest for 2 to 3 minutes before cutting into pieces.
  • I portion out what I believe we will consume over the coming days and freeze the rest. It really saves me a lot of time to have precooked chicken ready for our dinners; I just love it.

    My pressure cooker is Power Pressure Cooker XL. I have really enjoyed this cooker. It has several presets that make it easy to cook their recipes. However, I have other cookbooks I want to use and it can be difficult to decipher time and pressure needed for these recipes based on this machines presets. It is possible, but if I knew what I knew now, I would purchase a pressure cooker with a few helpful presets, but would also allow me to just choose a hi/low pressure setting and the time. Like this cuisinart (it’s only 6 quarts but has almost 1400 5 star reviews.) Or this Fagor which is 8 quarts.
