Popular Indo-Chinese dish Hakka noodles consists of stir-fried noodles, vegetables, and sauces. It is hugely popular in Indian restaurants and street stalls. It is typically consumed alone or as a side dish with Manchurian or spicy foods like gobi manchurian or chilli paneer. The Chinese community in Kolkata, India, is where the Indo-Chinese hakka noodles first appeared.

It has gained popularity among many Indians over the years. These are among the most frequently ordered and favored dishes everywhere from fine dining establishments to street carts. You want more Hakka noodles because they are so flavorful, delectable, and have a great crunch.

Unfortunately, the majority of these restaurants serve oil- and msg-heavy noodles that significantly dehydrate us. So why not make these at home.

Hakka noodles are unleavened refined wheat noodles made in the Indian-Chinese style. These are cooked in a Chinese wok with oil, vegetables, and soy sauce after being boiled al dente. Hakka noodles here both refers to the finished dish and the kind of noodles used.

There are a lot of brands selling hakka noodles. You may buy something from a trusted brand you prefer. I have used Chings vegetarian hakka noodles. We try to limit these since they are made from refined flour.

Use any other whole grain noodles, such as soba noodles, ramen noodles, or udon noodles, if you’re trying to avoid refined foods.

Soba noodles are super thin and made with buckwheat. I use them often to make my vegetable noodles. The thick, fatty udon noodles are made from whole wheat. Somen are super thin noodles made with wheat flour. I have used them here chilli garlic noodles.

You can still use these if you want to eat healthy, and I always do that, even though they aren’t included in the recipe for the traditional hakka noodles.

Your favorite Indo-Chinese restaurant’s Hakka noodles are just as delicious in this homemade version. Additionally, they are freshly cooked, msg-free, and low in oil.

The vegetables most frequently used in this recipe are cabbage, french beans, bell peppers, carrots, scallions/spring onions, and regular onions. You can use whatever you have. I always think cabbage gives the hakka noodles a great crunch and aroma. However, because I didn’t have any this time, I didn’t use it.

Use high-smoke-point oil, such as peanut, safflower, or sunflower oil. After stir-frying, high-end restaurants finish the dish with toasted sesame oil to enhance the flavors. Toasted sesame oil should not be used to stir-fry hakka noodles because it can leave a bitter aftertaste and is best used for dressing and salads rather than for cooking.

Soya sauce: Choose naturally brewed or organic soya sauce. Avoid using other soy products because they are made with harsh chemicals and lack depth of flavor. You can use tamari as a substitute to soya sauce.

Hakka noodles are prepared with vinegar, either white vinegar or rice vinegar. But you can also use apple cider. Avoid using synthetic vinegar.

Spices: The three spices used are garlic, ginger, and crushed pepper. These ingredients flavor the noodles without giving them a spicy flavor. I do not use ginger in my recipe. Since white crushed pepper has a milder flavor, it is frequently used. I use the black ground pepper.

  • 8 cup water
  • 2 tbsp oil
  • 1 tsp salt
  • 2 pack noodles
  • cold water (for rinsing)
  • 2 tbsp oil
  • 2 clove garlic (finely chopped)
  • 1 chilli (slit)
  • 2 inch ginger (chopped)
  • 2 tbsp spring onion (chopped)
  • ½ onion (sliced)
  • ½ capsicum (sliced)
  • ½ cabbage (shredded)
  • 1 carrot (sliced)
  • 2 beans (chopped)
  • 2 tbsp chilli sauce
  • 2 tbsp soy sauce
  • 2 tbsp tomato sauce
  • ½ tsp salt
  • ½ tsp pepper powder
  • 2 tbsp vinegar
  • few bean sprouts
  • firstly, in a large vessel take 8 cup water, 2 tbsp oil, 1 tsp salt.
  • once the water comes to a boil, add 2 pack noodles.
  • stir and boil for 3 minutes or until the noodles turn al dente. refer package instructions to know the cooking time.
  • drain off the noodles and rinse with cold water to stop the cooking process. keep aside.
  • in a large wok heat 2 tbsp oil and add 2 clove garlic, 1 chilli, 2 inch ginger and 2 tbsp spring onion.
  • stir fry on high flame.
  • now add ½ onion, ½ capsicum, ½ cabbage, 1 carrot, 2 beans. stir fry until the vegetables shrink slightly.
  • further add 2 tbsp chilli sauce, 2 tbsp soy sauce, 2 tbsp tomato sauce, ½ tsp salt and ½ tsp pepper powder.
  • stir fry until the sauces well combine.
  • now add boiled noodles, 2 tbsp vinegar and stir fry.
  • also add few bean sprouts and 2 tbsp spring onions. stir fry.
  • finally, enjoy veg hakka noodles garnished with more spring onions.

    वेज हक्का नूडल्स बनाने की विधि: – सबसे पहले धीमी आंच पर एक बड़े बर्तन में पानी गरम करने के लिए रखें. – जब पानी उबलने लगे तो इसमें हक्का नूडल्स, नमक और 2 चम्मच तेल डालें. – नूडल्स के पूरी तरह से पकने के पहले आंच बंद कर दें और इसे किसी छलनी में निकालकर ठंडे पानी से अच्छी तरह से धो लें. – तेज आंच में एक पैन में तेल गरम करने के लिए रखें. – लहसुन और प्याज डालकर 1 मिनट तक भूनें, कटी हुई सारी सब्जियां डालकर करीब 2-3 मिनट तक लगातार चलाते हुए भूनें. – अब इसमें नूडल्स, सोया सॉस, चिली सॉस, विनेगर, नमक और काली मिर्च पाउडर डालकर अच्छी तरह से मिक्स कर लें. – 1 से 2 मिनट तक चलाते हुए भूनें और आंच बंद कर दें. – तैयार है हक्का नूडल्स. स्प्रिंग ऑनियन से गार्निश कर मंचूरियन के साथ सर्व करें.

    Stir fry on a high flame

    While stir-frying, maintain a high heat or flame from the beginning to the end. This gives the food a distinctive smoky flavor and keeps the vegetables from getting mushy.

    Since it is done on a high flame, stir-frying the vegetables and hakka noodles will all take less than 4 to 5 minutes. Therefore, keep an eye on the pan at all times and keep stirring or tossing with a spatula to avoid overcooking and burning.

    This recipe can be easily modified to produce egg hakka noodles or chicken hakka noodles. When making the egg version, add the beaten egg to the hot oil and scramble it first. Remove the eggs to a bowl after cooking until they are soft. Proceed with the rest of the recipe.

    Add beaten egg and 3/4-inch-thick chicken strips to make the chicken hakka noodles. Place the chicken in the hot oil after coating it with the egg. Stir fry on a high flame until fully cooked.
