Here are some additional tips and our method for making perfect rice noodles for dishes like pad thai, pho, and spring rolls.

Compared to wheat noodles, rice noodles are much more delicate and thin. They become so simple to prepare as a result that we hardly consider it to be cooking.

As an alternative, you could spread a damp towel over your work area and roll the spring rolls there. Mama Lin prefers this approach because it spares her from having to constantly wipe the board with water.

How to serve

Bun Cha Gio is best served freshly assembled.

Pour the nuoc cham over the noodles or vegetables rather than the spring rolls for the best flavor and texture. This will keep the spring rolls crunchy.

Its optimal to fry the spring rolls right before enjoying.

Alternatively, you can fry the spring rolls an hour beforehand and reheat them in a 250°F oven.

When preparing to serve Bun Cha Gio, separate the ingredients and store them in the refrigerator.
