Did you grow up eating canned chicken? I didn’t. Yes, canned tuna, but until about 22 or 23 years ago, I had no idea that canned chicken was even a thing. I bought my first bulk can of chicken at one of the big box stores, now called Costco (at the time, I believe it was called Price Club), and I’ve never looked back. I was honestly surprised how good it is. Back then, I believe I simply combined it with mayonnaise and used it to make a sandwich. I don’t believe I began experimenting with canned chicken until a few years after I made my first purchase.

When I needed an immediate meal, particularly lunch, canned chicken became a welcome pantry staple. It has a very long shelf life and surprisingly delicious flavor in a variety of dishes. It’s also a lifesaver if you forgot to take something out of the freezer and your children ask what’s for dinner tonight. I tend to make most of my meals from scratch, so it surprises me how much I actually enjoy this shelf-stable product.

I love Caesar salad made from scratch, but that is not always reality on a busy day. I have a favorite bottled variety of Caesar salad dressing, it’s Cardini’s. However, I like to doctor it up with a few extras like lemon juice, pepper, Parmesan and garlic.
