One of my all-time favorite recipes is noodles because of how simple and adaptable they are. This chicken lo mein recipe is perfect for busy weeknights when I just want to make a quick dinner with minimal effort in 20 to 30 minutes after work.

With so many fresh veggies and chicken pieces mixed in with the noodles, you get an amazing range of flavors, textures, and colors. To top it off, the sauce tastes amazing and only requires a few basic ingredients that you most likely already own!

Easy Homemade Chicken Lo Mein Recipe Highlights

I don’t think I’ve been this happy to share a recipe with you in a long time, but oh my goodness! Meet my take on Chicken Lo Mein.

Everything cooks up quickly and tastes deliciously simple in this simple chicken lo mein. Actually, I spend more time prepping than actually cooking. Way better than takeout.

This simple chicken lo mein is stuffed with vibrant, crunchy, and fresh vegetables. You can make it with beef, chicken, shrimp, or vegetarian if you’d rather. It’s totally satisfying and absolutely tasty.

You’ll need:

  • You can use Ramen noodles or Lo Mein egg noodles. If you can’t find lo mein or ramen noodles, use spaghetti or linguine instead. Basically, you can use any kind of noodles—fresh or dried. Make sure the noodles are free of eggs if you have an allergy or intolerance to them. These are my fave eggless noodles for stir-fry.
  • Oil: Vegetable oil or canola oil.
  • Chicken: You can use chicken in place of hard tofu, beef, shrimp, pork, or turkey.
  • vegetables: bell pepper, snow peas, baby bok choy, carrots, mushrooms, fresh ginger, and scallions were used. Here, you can add as many veggies as you like. You can even try different veggies like thinly sliced Napa cabbage, broccoli florets, or fresh bean sprouts.
  • Soy sauce, oyster sauce, Shaoxing Chinese wine, cornstarch, sugar, sesame oil, and ground white pepper are needed to make the sauce for lo mein.

Storing & Reheating Instructions

Store leftovers in the refrigerator for up to 3 days. To reheat, place a pan or skillet over medium heat with one tablespoon of oil. Add the noodles to the hot oil and toss until thoroughly heated.
