Making homemade pasta at home is not only enjoyable and simple, but the flavor and texture are unmatched.
I’ll share all of my homemade pasta tips & tricks, whether you want to knead and cut the dough by hand or use a Kitchenaid stand mixer to mix and a roller to flatten and cut!
How To Make Pasta By Hand:
Place the flour in a mound on a sizable cutting board if you don’t have a food processor or stand mixer. Then, to make a sort of volcano-like well in the center of the flour mound, use your fingers or a spoon. Add the eggs in the center of the well. Olive oil and salt are drizzled on top of the eggs. Use a fork to begin whisking the eggs. Once they are combined, start whisking in a little of the nearby flour at a time, adding more and more until the egg mixture is nicely thick. (If by chance some eggs spill out, no worries; simply pull them back in with your hands or a bench scraper. The remaining dough should then be combined by being folded with your hands. To prevent sticking or if the dough seems too wet or sticky, add some extra flour to the cutting board and knead the dough for about 10 minutes, or until it is smooth and elastic. (You can add an additional tablespoon or two of water if the dough seems too dry, but you want the dough to be fairly dry. (Roll the dough into a ball with your hands, wrap it securely in plastic wrap, and allow it to rest for 30 minutes at room temperature. Use immediately or refrigerate for up to 1 day.
How to Make Pasta with No Eggs
Many of you, I’m sure, will want to know how to make vegan or eggless pasta. No problem. In fact, I make a dough similar to this for pici, one of my favorite pasta shapes. Basically, you cut dough into 1/4-inch strips and roll them out by hand. These eggless doughs are typically used for shapes like pici, cavatelli, trofie, and orecchiette rather than pasta noodles like the other ones we’re mainly focusing on today. Without using eggs, combine 200g of “00” flour, 200g of semolina flour, 200g of warm water, and 1 teaspoon of fine-grained sea salt to create a pasta dough.
