Etymology edit

The word sirloin derives from the Middle English surloine, itself derived from the Old French word surloigne (variant of surlonge), that is, sur for above and longe for loin.[1][2][3] In Modern French, the cut of meat is called aloyau or faux-filet.[4]

A fictitious etymology explains the name as being derived from an occasion when a king of England knighted the loin of beef as “Sir loin”. In fact, though the pun is reported as early as 1630, and the notion of a king knighting it dates to 1655, the name predates any of the kings who are mentioned.[5] The story at most influenced the spelling sir rather than sur.[3]

FAQ

Is beef sirloin a good steak?

The sirloin might be a lean cut of steak without as much marbling compared to the rib eye, but it’s anything but dry. Top sirloin is one of the most beloved sirloin cuts, with bones and tougher muscle removed for a more tender and juicy steak. However, bottom sirloin also has a place in the steak world.

What is beef sirloin steak used for?

The Sirloin is home to popular fabricated cuts but is first separated into the Top Sirloin Butt and Bottom Sirloin Butt. In the Top Sirlon you’ll find steaks great for grilling, while the Bottom Sirloin provides cuts like Tri-Tip and Sirloin Bavette, which are good for roasting or grilling.

Is beef sirloin steak tender?

Being lean, top sirloin rarely has enough fat content to change the texture. The soft, sometimes stringy texture of heavy marbling is not present in this cut. As long as the sirloin is not overcooked, it will still be tender and juicy. On top of all of this, sirloin is one of the most affordable cuts of steak.

Which is better ribeye or sirloin steak?

Ultimately, the choice between ribeye and sirloin comes down to personal preference. If you prefer a steak with intense flavor and tenderness, a ribeye is the way to go. However, if you prefer a leaner cut with a slightly firmer texture, sirloin is a great choice.
