Why You’ll Love This Recipe
- Whether you’re feeling under the weather or just want a hearty bowl of soup that takes you back to your childhood home, this recipe is for you! Comfort food at its best!
- Easy to make – Minimal prep work required. This recipe is largely hands-off, save from chopping the vegetables and shredding the chicken.
- Flavorful and scrumptious dinner that the whole family will love
- Meal prep: You can meal prep the soup on Sunday and have a nutritious supper ready for a few nights because one pot makes a lot of soup!
- olive oil – to sauté the vegetables in. Avocado oil also works! .
- carrots: I suggest utilizing medium-sized to large carrots, peeling them, and slicing them into slices that are ¼ inch thick.
- celery: thoroughly wash, then cut into small pieces.
- Peel and dice the onion before adding it to the soup. Did you know that red onions are the sharpest and white onions are the mildest? Yellow onions fall somewhere in the middle.
- Garlic cloves give this soup a wonderful savory flavor.
- Low-sodium chicken broth is what I suggest using so you can manage how much salt is in your soup. To significantly increase the protein content of this soup, you can also use chicken bone broth.
- A key component of this soup are the dried bay leaves, which will release a rich flavor as they simmer. Remove the bay leaves before serving.
- thyme – fresh or dried are both delicious!
- dried oregano – another important flavor.
- To season the soup and meld the flavors together, use salt and pepper.
- You can use spiral egg noodles instead of wide egg noodles, which are the traditional noodle in chicken noodle soup.
- Cooked chicken that has been shredded: You can either use rotisserie chicken or cook boneless, skinless chicken breasts or thighs and shred them!
- fresh parsley: Adding fresh herbs to a warm soup releases their essential oils, giving it a wonderful aroma that also happens to affect our taste buds!
- Lemon juice is optional, but it gives the soup brightness and helps the flavors pop!
How to Make Chicken Noodle Soup
The fact that chicken noodle soup has a well-known, gentle flavor that won’t upset sensitive stomachs is one of the reasons it’s a favorite among friends and on sick days. In addition, chicken noodle soup is a traditional comfort food that’s loved by all. It’s a simple one-pot meal!
- Melt the oil or butter in a large pot over medium-high heat. Add the onion, carrots, and celery and cook until tender. Stir in the thyme and bay leaves after adding the garlic.
- Pour in the chicken broth and bring to a boil. When the noodles are soft but not completely cooked, add them and simmer. You don’t want them to get mushy.
- Add the cooked chicken shreds and let it simmer for a short while. Add more broth if the soup is too thick for your taste.
- Add the parsley and lemon juice, then season to taste with salt and pepper.
- Eating a bowl of soup is like receiving a big, warm hug! Ladle the soup into bowls and enjoy!
Even though a bowl of chicken noodle soup is filling and satisfying on its own, here are some ideas for side dishes to go with it.
For up to four days, store chicken noodle soup in the refrigerator in an airtight container. The soup can be reheated on the stovetop or in the microwave. When reheating, if the noodles have absorbed too much liquid, add a little more broth.
Chicken noodle soup can be frozen, but if you do so with the noodles in it, the noodles will get a little mushy when the soup thaws. For best results when freezing, don’t add the noodles. When the soup is frozen, add the noodles after the soup has thawed. Just cook the noodles and add them to the soup once it has heated up.
The soup keeps for up to three months when frozen in a freezer container.
How to Serve Chicken Noodle Soup
Once the soup has been tasted and seasoned to your preference, place approximately ⅔ cup of cooked noodles in a bowl, then ladle the soup over the noodles. This can be eaten as a meal on its own, but if you’d like, I would serve it with the following sides:
- 4-Ingredient Almond Flour Crackers: I highly recommend making these homemade crackers if you enjoy them with soup. They’re easier than you might think.
- Farro salad, also known as sweet kale salad, is an easy side dish that will liven up your meal and provide a ton of veggies!
- Sourdough Bread: This soup would be ideal served with a fresh slice that is warm or toasty.
