In Asia, where rice is grown, rice noodles are widely consumed. But not too long ago, you could only buy them dried and in a few sizes here in the US.

Today, thankfully, fresh rice noodles are much more plentiful. All Asian grocers have a wide variety of fresh and dried noodles on their shelves that are made in Los Angeles and the Orange counties.

I like making rice noodles, but when I first started, I would make too much to eat all at once, which left me wondering if I could store them for later use and if so, how.

I tried a few different approaches because, as they say, necessity is the mother of invention, and I’m happy to share my findings with you, so please continue reading.

I strongly advise using fresh rice noodles instead of dried if you have the option. There’s nothing wrong with dried noodles.

They work well and are incredibly convenient to use. But fresh is so much better. Naturally, as with most fresh foods, it’s best to keep them in the fridge for a short period of time.

The first thing I discovered was that when stored, rice noodles have a tendency to clump together.

I quickly learned that dipping them in oil and then chilling them prevented this from happening; I’ll explain that in a moment.

Follow these three steps to stop the rice noodles from sticking together while they are in the refrigerator:

  • Toss the rice noodles in oil
  • Portion the noodles out and keep individuals portions separate
  • The starch coating on the noodles, which is what makes them stick together, is removed by washing them.
