How to Stop Starch from Shooting Out
As we already stated, the main purpose of using this technique to cook pasta in the Instant Pot is to stop starch from escaping during the release and drenching your kitchen in starchy liquid. In fact, it was one of the first times I prepared gluten-free pasta in the Instant Pot, and when the starch began sputtering across my kitchen, I was unsure of how to react. I was worried that my Instant Pot was damaged because so much liquid had leaked from the release valve because everything around it was covered in a slimy starch substance. Fortunately, a few dishwasher cycles and disassembling the valve to clean it prevented further damage.
The first step was devising a method of cooking it that minimizes the amount of starch that initially escapes in order to prevent the starch from escaping in the future. It truly makes a difference. But if it does, the next step was to prevent the starch from escaping without overcooking the pasta.
If a lot of starch leaks from the pressure release valve, gently close it with a towel and leave it closed for 20 seconds. The valve can be opened once more after 20 seconds. Repeat this procedure as often as necessary until all of the pressure has dissipated. This facilitates temperature control and quick boiling with the Instant Pot, reducing the risk of starch evaporation.
Another technique is to only partially open the valve, allowing the pressure to release slowly. In order to prevent the starch from bubbling up, the pressure should be released gradually.
