This recipe for homemade egg noodles is simpler than you might think and ideal for beef stroganoff or chicken topped with a creamy sauce. It makes an excellent addition to Chinese dishes, or you can simply butter it for a quick side dish. Our preferred method is to prepare a straightforward chicken noodle soup!

The perfect noodles don’t just make themselves. There are a few tricks and tips that can help ensure that your noodles always have the perfect consistency and come out perfectly.
#3 Knead the dough for 5-10 minutes.
At this point, the dough will be somewhat messy and sticky. Turn it out onto a surface that has been lightly dusted with flour, like a large cutting board or your countertop. As you start to knead the dough, add a little flour to it.
Make sure your hands are well floured. Put pressure on the dough with your palms while moving it away from you. Turn it a quarter of a turn as you flip it in half back toward you. Begin the process again, pushing down and away. Flip and turn. Sprinkle more flour as needed during this kneading process.
Continue kneading the mixture in the manner described above until it is no longer sticky and has a pliable, smooth consistency that is almost like a firm ball of play dough. It should have elasticity and springiness to it as well. I won’t lie to you; this process requires some time and energy. It can take anywhere between 5 and 10 minutes of hard work. It’s difficult to over-knead because eventually it will become too elastic and you won’t be able to continue.
#2 Draw the dry ingredients into the liquid by working outward from the center with a gentle circular motion.
Pour the milk, and crack the eggs into the well. If the dough is too dry, add more milk as needed after adding the first 1/2 cup. Start incorporating the flour into the milk and eggs using a wooden spoon and a gentle circular motion. Once all the flour has been absorbed into the liquid, start at the center and work outward. Better dough absorption is provided by this method of mixing, which also protects the gluten.
