After experimenting with a few methods, I can say that oven roasting is the quickest and most dependable way to prepare chicken breasts from frozen. The chicken breasts are cooked as quickly and efficiently as possible from all sides thanks to the high heat of the oven and the placement of the breasts in a single, even layer. The only drawback to roasting may be that it leaves a chicken breast unadorned, but fortunately, we also have a delicious fix for that.

Four Key Steps to Cooking Chicken from Frozen

  • Make a tasty topping. For this recipe, we’re using breadcrumbs and grated Parmesan, paired with some seasonings like garlic powder, salt, and pepper. You could also swap the breadcrumbs for almond meal.
  • Coat the chicken breast in olive oil. Or butter or ghee. I think yogurt or mayo would work well too, but at the very least you need some fat to protect the chicken breast from drying out on the exterior while the interior cooks to the correct temperature.
  • Spread the chicken breast out into an even layer with plenty of space between them. This ensures the pieces cook evenly from all sides. Also, if you want to add some quick-cooking vegetables (say, cherry tomatoes) to the sheet pan, be sure to add them after the first half of cooking is complete.
  • Make sure it’s done! Because we’re cooking the breasts from frozen, it’s super important that the chicken reaches an internal temp of 165°F.

    The first step to cooking frozen chicken is to take those frozen solid chicken breasts and place them on a baking sheet that has been lined with foil. Drizzle or spray olive oil or cooking spray on the foil. I prefer to line my pan with oil because it helps with clean up after these are done cooking and keeps my pan looking nice.

    Frozen chicken breasts should be added to the pan with about a half-inch to a 1-inch space between each piece.

    Drizzle the chicken breasts with olive oil and melted butter. Season liberally with salt and pepper. You are now prepared to put the chicken in the oven.
