Mixing, Rolling and Cutting The Egg Noodle
Old Fashioned homemade egg noodles are super easy to make. They are made of flour, salt, water, and eggs. There’s no milk or leavening here. Since we’re not making drop dumplings, neither milk nor noodles are required for this recipe to rise. When the noodles are added to the hot broth, they will naturally expand.
- In a large mixing bowl, combine the flour and salt and mix well.
- Create a well in the middle, then fill it with water and eggs.
- Mix until it forms a sticky round dough ball.
- Place the dough on a well-floured surface
- On a lightly floured surface, roll the dough to a thickness of 1/8 inch. Don’t be tempted to roll them thicker. When dropped into the hot broth, they will swell up quite a bit. If you want to be exact, you can roll the dough into a rectangle shape, but as you can see above, I rolled it into a more rounded shape. It works either way.
- Cut a long, vertical slice down the middle of the dough with a sharp knife or pizza cutter (the pizza cutter works best). Next, create horizontal incisions that are 4 to 5 inches long and 1/4 inch wide. It’s really up to you. Cut the dough into thirds rather than halves and make shorter horizontal cuts if you want shorter noodles.
- Separate the noodles, and lightly flour them. While the meat is cooking, leave them on parchment paper or a surface dusted with flour. This will take several hours, so spread them out on cookie sheets lined with parchment paper to free up your work surface. Just make sure they are not touching. The longer the noodles are left to dry, the better. When you cook them in the broth, they won’t stick together as much.
What Is Kitchen Bouquet?
A seasoning and browning ingredient for meats, gravies, and sauces is called Kitchen Bouquet. It’s made with herbs, spices, vegetables, and water. Some think it has a mild beef flavor. It adds a dark rich color to gravy and sauces. It is not required for this recipe, so don’t worry if you don’t have it. Your roast will still taste great. When shopping, look for Kitchen Bouquet in the spice aisle.
