How To Make Chicken Noodle Soup Without Chicken

You will never know this Chickenless-Chicken Noodle Soup doesn’t actually have chicken in it. It’s perfect for vegetarians. Make your vegetarian friends happy with this cozy soup.

I would have to give up chicken soup if I gave up eating meat.

Or so at least I thought.

I ate a lot of chicken and stars, so hang my head.

I know that has enough sodium for a week.

Or possibly a month.

And I love it anyway.

But once I discovered Better than Bouillon (nope not an ad…I just love it) made a no chicken base (and no beef base too) lots of things opened up.

And I mean lots of things.

As a result, I can now recreate a lot of recipes.

For me, it’s probably just as horrible as Chicken and Stars, but whatever .

And yes, it does amazingly taste like chicken.

Then again…so many things taste like chicken.

How to store Vegan Chicken Noodle Soup

  • Refrigerator: Keep pasta and soup separate for three to four days.
  • Freezer: Allow soup to cool fully, then transfer to a freezer-safe container (do not include pasta) and freeze. When it’s time to serve, place the container in the fridge for the entire night, reheat in a pot, and then top bowls of soup with noodles.

Honestly, it doesn’t need it.

In fact, I really like it better without the pieces of fake chicken.

To be honest, though, I didn’t particularly enjoy the chicken chunks in my typical chicken noodle soup.

I’m a carb girl through and through, what more can I say? .

However, I include the fake chicken because my husband enjoys it.

I have tried a variety of noodles for this soup.

All work, but I really like the wide noodles.

In this case I used egg noodles.

Especially during the winter months, this soup is prepared multiple times a month.
