Difference between Lomi and Mami

Although these two are regarded as the classic dishes for rainy days, they are very different from one another. Here are a few key differences:

While egg noodles are used in both dishes, Mami uses thinner noodles and Lomi uses thicker noodles. Being soaked in lye water gives lomi noodles their distinctive chewy texture, which is well-known.

Meat – The primary ingredients in mami are typically pork, beef, or chicken. While Lomi is made with a combination of different toppings like thin slices of pork, cracklings, fish or squid balls, kikiam, chicken or pork liver, etc.

  • Meat and Poultry– this recipe uses thinly sliced pork belly, squid balls or kikiam, pork liver, and eggs. Raw beaten eggs were used to thicken the broth further and hard-boiled eggs as toppings. Feel free to add your choice of toppings like chicken meat or gizzard, cracklings, and even shrimp.
  • Vegetables– aside from the aromatics like garlic and onion, I also used carrots, cabbage, and spring onions.
  • Noodles- of course, Lomi is not Lomi unless you use fresh thick egg noodles!
  • Seasonings– Salt, soy sauce and fish sauce were used to flavor this dish.
  • Liquids– I used pork broth as the base for the soup. Water is also used to boil the pork belly to render the fats and also for the cornstarch slurry.
  • Thickener– cornstarch was used to achieve the perfect broth consistency for this recipe! A good alternative is cassava or potato starch.

  • 50 grams Kikiam, sliced

  • 200 grams Ground Pork
  • 8 cups Water
  • 400 grams Pancit Lomi Noodles, rinsed with water
  • 200 grams Chicken Thigh, deboned sliced into small strips
  • 1 dozen Quail Eggs, boiled
  • 40 grams Chicharon or Pork Rinds
  • 2 Large Eggs, beaten
  • 5 tbsp Soy Sauce
  • 6 tbsp Cornstarch, dissolved in a 1/4 cup of water
  • Salt and Pepper to taste
  • Rinse the Pancit Lomi Noodles in water to remove the saltiness and set aside.
  • Heat Olive oil in a medium-sized pot. Sauté the garlic, shallots and ginger until fragrant.
  • Add ground pork, chicken, squid balls, kikiam and continue stir-frying over medium heat for 5 minutes.
  • Season with soy sauce, salt and pepper, add water and Chicken Bouillon Cube then simmer for 5 minutes.
  • Add the Lomi noodles and let it simmer for another 15 minutes.
  • Add carrots, bell pepper, spring onion and cabbage. Pour in the Cornstach mix and stir well. Add the beaten eggs stirring continuously.
  • Adjust the taste with salt and pepper. Transfer to a serving bowl and garnish with Chicharon and Quail Eggs.
