Can Ramen Noodles Be Made Successfully at Home?

Most likely, you already have everything you need in your pantry to prepare homemade ramen noodles. This recipe for eggless Japanese ramen noodles only calls for three ingredients.

To make fresh ramen at home, all you need is:

  • All-purpose flour
  • Water
  • Alkaline agent: baking soda or lye water (also known as “kansui,” which is available from an Asian grocery store).

Step 1: Fill the bowl of a stand mixer with the dough hook attached. Whisk together the eggs and the dry ingredients. Stir until well combined; mix for an additional five minutes, or until dough is smooth.

Step 2: Wrap dough and refrigerate for at least 1 hour (but not more than overnight – see recipe note #3. ).

Step 3: Divide dough into six equal pieces and dust baking sheet with flour.

Step 3: Using a manual pasta maker, run one piece through the thickest setting. Turn the dial to a thinner setting each time as you repeat the process three more times. Cut dough in half crosswise. Run dough through the pasta maker with the finest cutter attached to make cuts. Place the noodles on the prepared baking sheet after gently separating them and dusting them with flour. Repeat with remaining dough.

Step 4: Cook noodles in water or broth for 1 to 2 minutes, or until cooked through. It should be noted that the noodles can also be frozen; simply add them to the boiling liquid straight from the freezer and cook for an additional 30 seconds or so over fresh.
