How to make sweet and sour chicken stir fry step by step:
1. Ingredients needed to prepare the dish. This is my all-time favorite combination of ingredients, but you can use any protein or vegetable you happen to have on hand. To make it vegetarian, use firm tofu in place of the chicken. You can also use shrimps or thinly sliced beef. Regarding the vegetables, use whatever veggies you have on hand and don’t forget to add the mushrooms.
2. Assemble the ingredients (this takes the longest, but the recipe comes together quickly):
- One double chicken breast should be chopped into 2 cm/1 inch cubes. Add 1 tablespoon of oil and finely chop 1 Five inch/four centimeter pieces of ginger, five finely chopped garlic cloves, and half a teaspoon of chilli flakes; season with salt to taste. You can marinate for two hours or overnight before cooking.
- Vegetables: chop 1 red bell pepper into 5 mm / ¼ inch stripes, 7 oz/200g cremini mushrooms into 5 mm / ¼ inch slices, and 3 medium carrots (5 3 oz/150g) into very thin matchsticks.
3. Six tablespoons of light soy sauce, three tablespoons of rice vinegar, two tablespoons of light brown sugar, two ts of potato or corn starch, and two ts of tomato paste or ketchup are the ingredients for the sweet and sour sauce.
4. Whisk all the sauce ingredients in a bowl. Set aside.
5. Cook the egg noodles (4. 4 oz / 125g) and (3. Five ounces (100g) green beans should be put in a medium pot, covered with boiling water, a small amount of salt, and cooked for four minutes before straining.
6. In a large frying pan, heat up a tablespoon of oil. Cook the chicken for two minutes on high heat without stirring, and then for another one to two minutes, or until it’s cooked through. Transfer to a plate. Cook the chicken just until it turns from pink to white; if you cook it longer, the chicken will become tough.
7. Carrots and bell peppers should be cooked but still slightly crunchy after 4 minutes of cooking in the same pan with an additional tablespoon of oil and bell peppers.
8. When the mushrooms are added to the pan, stir and cook for about 4 minutes. Mushrooms and vegetables should be slightly crunchy but browned.
9. Return the chicken to the pan and stir in the sauce, cooked noodles, and green beans.
10. Toss everything together, bring to a boil. Transfer to plates and serve.
The noodles absorb the sauce and turn mushy when reheated, making the entire dish a bit dry. This makes the dish less tasty. If you wish to prepare it ahead of time, keep the sauce apart and mix it right before serving.
