The sweet potato goes incredibly well with the sauce, which is almost too good. It’s a variation of the creamy cilantro sauce we use to top these simple tacos with roasted vegetables.

How to Make Sweet Potato Noodles
So, the following is how we handle sweet potatoes and prepare spiralized sweet potato noodles:
I purchased the Paderno 3-blade spiralizer probably about a year ago and I love it. Then Paderno asked me if I wanted to try out their newer 4-blade spiralizer. Umm, YES. I tried it out and decided I love it. I passed my 3-blade on to a good friend who just started her own food blog, Chocolate Slopes. Edited to add – In efforts to be extremely transparent, I’ve now purchased and tried the Inspiralizer and it is my new favorite – it has genius features that make it a step above (better suction to the counter, better blade system, etc.).
Here are a few features of the new Paderno 4-blade spiralizer that I really like:
-The core that is produced is much smaller. This not only cuts down on waste but it also makes it easier to spiralize smaller vegetables such as carrots. And it makes it so you can get those ADORABLE tiny little spirals.
-The 4-blade is safer and occupies less space when stored because all of the blades are kept inside.
-A fourth blade! Hellloooo “angel hair. (I can’t wait to use this blade; I haven’t done so yet!)
You get tiny noodles from a sweet potato of average size, can you believe that pile of noodles?
I don’t know what else could be done to make eating vegetables enjoyable if this We love spiralizing sweet potatoes, zucchini, and cucumbers. Carrots, beets, butternut squash, and whatever else I can get my hands on are coming up soon.

Ingredients to make suan la fen noodles from scratch
You only need two ingredients to make the noodles from scratch and it’s naturally gluten-free too. 1. Potato starch I use potato starch (NOT potato flour) for this recipe. You will see some recipes using sweet potato starch, also known as di gua fen (地瓜粉). It works too. Potato starch is a bit easier to find than sweet potato starch.
Another substitute you can use is cornstarch, this will be my last resort. You can see from the photo below that noodles made with cornstarch (on the left) aren’t as translucent. The texture comes out a bit more starchy too. The ones made with potato starch are translucent and has chewy and bouncy texture.
2. Water This recipe calls for both room temperature and hot, boiling water.
How to make Pasta at home
The basic Sweet Potato Pasta dough is made according to the recipe I’m sharing today. You can pretty much make any type of pasta you want with this dough.
To make the Sweet Potato Noodles, I used my beloved Pasta Machine. Even though it is possible to make Pasta without one, I highly recommend using Pasta Machine.
It will make your life so much easier, give your pasta the right thinness and make them look uniform as well. You may think that a Pasta Machine is super expensive and a waste of money, but you can actually find one for any type of budget. You can even find some for less than 25$ like this one; a great starting point!
I created several different recipes using the Sweet Potato Pasta Dough. First, some Sweet Potato Tagliatelle. They were prepared with a straightforward tomato sauce and garnished with fresh rosemary and goat cheese.
Making a sauce that was not too strong was the perfect way to make the Tagliatelle shine—it was a very straightforward dish, but sometimes the simplest ones are the most delicious ones.
Secondly, I made Sweet Potato Ravioli. I also used my pasta machine to create the ravioli, which resulted in a lovely, thin ravioli sheet, and they were probably my favorite of the bunch.
I prepared the filling then used a Ravioli Cutter Stamp to create a pretty ravioli shape. I highly recommend using a Ravioli Cutter Stamp to make sure you seal the Ravioli right.
When compared to the Pasta Machine, the Cutter Stamp is more affordable, with prices ranging from $5 to $15. You don’t want your filling to leak everywhere when you cook the ravioli!
I used roasted eggplant, goat cheese, pine nuts, and fresh thyme to fill the sweet potato ravioli. Ravioli with goat cheese add a nice flavor pop, so I adore using it in them.
I was disappointed that there was only enough for one meal because these sweet potato ravioli were highly addictive. I won’t include the entire recipe here, but please let me know if you’d prefer that I write a separate article about it.
