Homemade Chicken Noodle Soup Recipe

This recipe will take you from start to finish.

You have two options: either make everything from scratch or add some prepared ingredients, like the premade pasta I’m using today.

  • 3–4 pound whole chicken (other chicken cuts are shown in the variations below)
  • 2 tbsp Olive Oil
  • 2 Bay Leaves
  • 3 Celery Stalks (coarsely chopped)
  • 2 Carrots (peeled, coarsely chopped)
  • 1 Onion (coarsely chopped)
  • 2 Garlic cloves (crushed)
  • 2 tbsp Unrefined Sea Salt
  • 1/2 tsp Black Pepper (whole or ground)
  • 8.8oz of Wide Egg Noodles (see above for homemade)
  • 12 cups of Water

1. Remove the wings and neck from the whole chicken, then cut each one into several tiny pieces.

2. In a large pot, combine the vegetables, olive oil, and bay leaves. Cook over medium-high heat for approximately five minutes. Add remaining ingredients except the noodles.

3. After bringing the water to a boil, skim and remove any scum that rises to the surface. Reduce the heat and simmer covered for 45 minutes.

4. Using a slotted spoon, remove the cooked chicken and set it aside. Strain the broth and discard the remains. Put the broth back in the pot and heat it up to a boiling point.

5. Add the egg noodles and boil for the length of time specified on the package plus an additional minute or two for plump noodles (mine took 12 minutes). Boil al dente noodles for one minute less than the package specifies. Once your noodles are perfectly cooked and flavored, turn off the heat.

6. Shred the chicken into large chunks while your pasta cooks. Remove the skin, bones, and organs from the meat.

7. Return the shredded chicken to the pot, transfer to a big bowl, and dig in!

How to Make Chicken Bone Broth

  • 3-4lb Whole Chicken
  • 2 Bay Leaves
  • 2 tbsp Vinegar
  • 1 Large Onion (coarsely chopped)
  • 2 Carrots (peeled and coarsely chopped)
  • 3 Celery Sticks (coarsely chopped)
  • water

1. Remove the wings and neck from the whole chicken, then cut each one into several tiny pieces.

2. Fill the insert with water to the MAX line after adding all of the ingredients. Secure the lid, and turn the vent valve to “seal”.

3. Pressure cook on high for 1 hour and 15 minutes. Allow the pressure to release naturally (moving the valve to “venting” will result in a very messy splatter).

4. Remove the Chicken with a slotted spoon and set aside. Pour the hot broth through a strainer into glass jars (a metal lid may seal), then let cool to room temperature before putting in the refrigerator (a lid ping may occur). Keep refrigerated, unless you properly pressure cook the jars.

3. After the water reaches a boiling point, skim and discard any debris that rises to the surface. Reduce the heat and simmer covered for 6-24 hours.

4. Cook the broth for the final ten minutes with the addition of parsley.

5. Remove Chicken with a slotted spoon and set aside. Pour the hot broth through a strainer into glass jars (a metal lid may seal), then let cool to room temperature before putting in the refrigerator (a lid ping may occur). Keep refrigerated, unless you properly pressure cook the jars.
