Now that Thanksgiving is over, I’m sure you have a ton of leftover turkey! Like many of you, I roasted a turkey—a big one, even though there was just the two of us—and I adore soup season! I have the ideal solution, er, I mean recipe, for what to do with the leftover turkey meat now that I have an abundance of it. I made a totally homemade version of the classic leftover turkey noodle soup!

This recipe is a must-have, especially when the weather is chilly. What I love about this soup, is that it’s simple. You can add as much or as little turkey, and the meat can be either dark or white. Simple, tasty, and filling, it’s the perfect way to make leftovers shine.

  • Vegetables: We want to build the foundation of our soup with carrots, celery, and onions. Although the onion is chopped in the image above, you are not required to chop it. Just add it whole (peeled) to the soup.
  • Turkey: Since we’re not wasting any food today, we’re going to make soup straight from the carcass, which will give our soup an incredible flavor and potent anti-flu properties.
  • Seasoning: Use only a small amount of salt and pepper in the early stages of the broth.
  • Water: A large portion of this will reduce and simmer, giving us delicious broth. For added flavor, you can use broth without any added salt in place of water, but you should really not waste your broth because the turkey carcass will add a lot of flavor.
  • Turkey: Any remaining white or dark meat from your turkey

  • Bouillon: For these kinds of soups, I really like to add a cube of chicken bouillon or vegetable bouillon. Vegeta has no MSG and adds a ton of wonderful flavor.

  • To prepare the broth, place the turkey carcass, water, onion, celery sticks, and carrots in a large soup pot. Season with salt and pepper. Cook for about 1. 5 hours, covered over medium-low heat. Using tongs or a slotted spoon, remove the carcass and everything else from the soup; set the carrots aside. The broth should be the only thing remaining in the pot.
  • To make the soup, combine the noodles and turkey meat in a pot. A few more cups of water may be necessary because some of it may have evaporated. After cooking, chop the carrots into half moons and return them to the pot. Sprinkle with salt and pepper, then add the vegetable or bouillon cube. Cook for another 8 minutes until noodles are cooked.
  • Serve: Garnish with parsley and serve.
