How To Make Your Own Spicy Noodle Sauce

  • 8 ounces ramen noodles
  • Ⅲ ⅓ cup finely chopped green onion, only the white or light green portion
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon oil
  • ¼ cup low sodium soy sauce or tamari
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon sriracha more or less to taste
  • 1 tablespoon honey, maple syrup or brown sugar
  • 1 tablespoon rice vinegar
  • 2 taaspoons toasted sesame oil
  • ½ teaspoon red pepper flakes
  • As directed on the package, boil a pot of water and cook the noodles.
  • In a small sauce pan, add the chopped green onion, ginger, garlic, and oil. Sauté for three to five minutes.
  • Add in all remaining sauce ingredients and whisk well. Simmer over low heat for about 5 minutes.
  • After adding the cooked noodles to the sauce, simmer it for a few minutes so the flavors can meld.
  • Taste and adjust flavors as desired. Garnish with chopped cilantro, fresh green onions, and extra red pepper flakes to taste!

Why I love this recipe

  • Easy to make. Less than ten minutes are needed for cooking in total, and very little preparation is needed.
  • Budget-friendly. These are common ingredients that you most likely already have in your pantry. Oh, and noodles are one of the cheapest grains available.
  • Versatile. These noodles taste good served hot, cold, or room temperature. They are very adaptable.
  • Easy to customize. Even though they’re great by themselves, these can be enhanced by adding protein, a variety of vegetables, or even some toasted nuts.

How To Make Your Own Spicy Noodle Sauce

This recipe uses simple and easy ingredients. Most likely, you already have everything in your pantry; if not, we can get it at any general grocery store. Here is what you’ll need:

  • Noodles. Noodles of any thickness work best because they absorb flavors and sauces so much better. I typically use rice noodles.
  • Low sodium soy sauce. You can use tamari instead if following a gluten-free diet.
  • Dark soy sauce. A richer and more robust flavored soy. Utilize it sparingly because a little goes a long way.
  • Sesame oil. A must for any good Asian dish.
  • Water.
  • Vegetable oil. Or any neutral-flavored oil.
  • Garlic. Minced.
  • Green onion. Sliced to separate the whites from the greens.
  • Red chilies. Decide the spice level you want and then choose accordingly.
  • Bean sprouts. These should be shiny and white with yellow tips.

I’ve made this recipe simple to follow at home with the step-by-step photos provided below. Please refer to the recipe card located at the bottom of this post for the complete printable recipe instructions and ingredient amounts.

Step 1: Make the hot noodle sauce: In a small bowl, combine the sugar, water, dark soy sauce, sesame oil, and soy sauce. Mix until well combined.

Step 2: Cook the noodles: After that, boil the noodles according to the directions. Once cooked, drain them and set them aside.

Step 3: Saute aromatics: Add some vegetable oil to a large skillet and heat it over medium-high heat. When hot, add the red chili, garlic, and white part of the green onion, and stir-fry for two to three minutes.

Step 4: Put it all together: Add the noodles and sauce to the skillet and heat it through so the noodles are completely covered in sauce. After that, increase the heat to high, add the bean sprouts, and cook for an additional three minutes. When the green onions are soft, add them and cook for another two minutes.

How to make these more or less spicy

If you want your noodles hotter, you can add extra chopped chilis, red chili flakes, or even some chili sauce (I love sriracha and gochugaru). As written, these noodles are spicy enough to give your tastebuds a kick without being overpowering.

If the dish seems too hot, reduce its heat by halving the chili sauce or by not adding any fresh chiles. To help beat the heat, you can also serve your noodles with a dairy product.

Like I said earlier, the simplicity of customization is what makes this dish so delicious. It’s a great meal to clear out the fridge because you can pretty much add anything to it. Here are some ideas:

  • Include protein: Tofu, beef strips, shrimp, and chopped chicken breast are all excellent choices.
  • Use different noodles: Use brown rice, buckwheat, ramen, or udon noodles in place of the rice noodles.
  • Change up the veggies by adding some cauliflower, bok choy, mushrooms, cabbage, broccoli, and/or carrots.
  • Alter the sauces: Try adding some oyster or black bean sauce for a sweeter punch. We also enjoy using sweet chili sauce in place of the spice.
