As someone who once worked in a Chinese restaurant, I can tell you that we used to prepare vermicelli, which are extremely thin rice noodles, by soaking the uncooked, dry noodles in cold water for about an hour or until they are flexible. This soaked but uncooked noodle can then be kept in the fridge for a few days by being covered with plastic wrap. They dont need to be oiled. We simply place it in boiling water for about a minute, cook it, and then use it as we see fit. Cooking with the soak takes essentially no time at all.

Maybe you can use this technique in the future and soak your noodles beforehand. The remaining noodles can then be saved for a later time and used in the amount you need. Plus itll save on cooking time.

Simply store the leftover rice noodles in the refrigerator in a zip-top bag. Put however many you want into a heat-resistant bowl when you’re ready to use them, then cover them with boiling water. Immediately after draining, place them in a serving bowl and top with fresh cilantro and leftover Thai peanut sauce. Toss them lightly. Fast delicious hot lunch.

For me, reheating these noodles always causes them to be overcooked, and repeating the process never yields a good consistency. I either toss leftover noodles into a salad or add them to soup. When using them in soup, there is no need to prepare them; simply submerge chilled noodle clusters in hot water to separate them. Noodles that are soft as a result may not be to your taste.
