My friend Marina introduced me to a version of today’s kelp noodles, which served as the inspiration for this recipe. I had never tried kelp noodles or coconut aminos before, but I became addicted right away. I modified her recipe by adding chicken to make it a complete meal, adding extra vegetables and building on the plain coconut aminos to create an easy-to-make but flavorful sesame chicken sauce. Kelp noodles are made from edible kelp, a. k. a. Seaweed is a very low-calorie, low-carbohydrate food that has a chewy texture.

Kelp noodles are a great ingredient in low-carb and keto pasta recipes. (They’re one of my favorite keto pasta alternatives!).

One of my favorite things about this stir-fry kelp noodle recipe for keto is that it only requires one skillet for dinner.

Less cleanup results from this, and the entire process takes only about 30 minutes. There is no need to prepare a side dish or vice versa because this one is both.

To prevent the chicken from drying out as you cook the stir fry, you don’t want to fully cook it at this stage. You want it just almost done at this point. It will finish cooking in the following steps!.

Japanese kelp noodles have just 6 calories and 2 grams of net carbs per 4 oz serving on their own. A great low calorie and low carbohydrate option.

  • 1 lb Chicken breast (cut into bite size pieces)
  • 12 oz Kelp noodles
  • 10 oz Mushrooms (sliced)
  • 2 cup Broccoli (cut into small florets)
  • 3 large Carrots (cut into bite size pieces)
  • 1 tsp Olive oil
  • Start a kitchen timer while you cook by tapping on the times in the instructions below.

  • Heat the olive oil in a large skillet or wok over medium heat. Fry the mushrooms for about 5-8 minutes, until the liquid from the mushrooms has evaporated.
  • Add the chicken pieces, carrots, and broccoli (focus on the chicken touching the pan). Stir fry for 6-8 minutes, until the chicken is almost cooked through but not dry.
  • To make the sauce, whisk together the coconut aminos, toasted sesame oil, garlic, and sesame seeds.
  • Add the kelp noodles and sauce mixture to the pan. Stir fry for about 5 minutes, until heated through. Season with sea salt to taste if needed.
  • 1. Open your bag of kelp noodles first, then give them a thorough rinse. I like to soak my kelp noodles for ten minutes in warm water. This softens and separates them in addition to rinsing off the slightly salty liquid that was used to package them.

    In order to “complete” the meal, I’d also have some raw crackers, a cup of soup, or some garbanzo beans drizzled with hemp oil. Yum.

    If you want to purchase kelp noodles in person, you’ll have to check out your local resources. In NYC, they can be found at High Vibe on 3rd street, and I’m guessing Organic Avenue probably carries them, too. In the DC area, you can find them at Roots Market in Clarksville, MD. Ask around, and if your local health food store doesn’t carry them, you may be able to put in a request!
