After 45 minutes, carefully flip the dough over and continue to let it dry for an additional 30 minutes. Bring the beef or chicken stock to a rolling boil while the dough is drying. Use a sharp knife to cut the dough into noodles or other shapes after it has dried. Put the noodles in the stock once it has reached a rolling boil, then turn down the heat so it simmers for 20 minutes.
