It’s judgment time, will Pho win?

Anyone who knows me well knows how much I adore Pho. If you’ve never had Pho, it’s a Vietnamese noodle soup made with rice noodles, broth, herbs, and typically chicken or beef. It is a well-liked Vietnamese street food and one of my favorite comfort foods. I was determined to give the Thai substitute for pho when I first learned about it. Boat noodle soup, also known as kuaitiao ruea, is the Thai equivalent of Pho.

Boat noodles both contain pork and beef they are each seasoned with a dark soy sauce and nam tok. Nam tok is cow or pigs blood mixed in with salt. Sounds funky, if you ask me, but Im game to try almost anything at least once. The type of noodles that are used in boat noodle soup can vary, it is commonly served with pork cracklings and basil.

Ayutthaya was built around its rivers, and canals connected its various neighborhoods, so a large portion of the city’s commerce was conducted on the water. This extended to daily activities like eating, in addition to the trade. When the Ayutthaya Kingdom was in existence, vendors would cook noodles on small boats and sell them to people on land or aboard other boats. This was the origin of one of Ayutthaya’s most popular dishes, which is now just known as boat noodles.

Although the idea of boat noodles is said to have originated in Ayutthaya, the concept has since spread throughout Thailand, especially to Bangkok, which had its own system of canals that made it possible to serve food in the country’s traditional manner. Why is it called boat noodles?

The first indication of its uniqueness comes from its name, Noodle Boat, which alludes to the numerous food vendors in Thailand who sell lunch from boats in the country’s canals and rivers, giving rise to the well-known and adored dish known as boat noodles, a beef and rice noodle soup with a rich, spicy broth.

What is the difference between Pho and boat noodles?
