Rice noodles and egg rolls are combined in these Bn Ch Gi Chay or Vietnamese Noodles and Fried Vegetarian Spring Rolls Bowls with fresh herbs, pickled radish, and carrot.
Another delicious addition to this Bn Ch Gi Chay is some thinly sliced cucumber for some extra crunch. Vietnamese dipping sauce, or nuoc cham, is used to finish this bowl, and for this rendition, I naturally used my homemade vegan “fish” sauce.
WHAT IS BUN CHA GIO?
Vietnamese for noodles is “bun,” while Vietnamese for egg rolls is “cha gio.” Chay means vegetarian. So ‘cha gio chay’ are vegetarian spring rolls.
The ingredients for the rice vermicelli or noodles are rice flour, water, and occasionally salt.
They come in bundles. I prepared two bundles for this recipe, dividing them into two bowls.
These are slightly translucent when dried.
I simply boiled them. They will become completely white as they cook.
To remove excess starch and prevent these rice noodles from cooking, run the noodles under water.
