Okay, I know; the internet is full of garlic noodles. But believe me, this one is different. It has a couple of unusual ingredients. It’s not usual for me to send you on the prowl for a difficult ingredient you’ve never heard of. It’s unusual in that you don’t typically see it served with fish sauce and oyster sauce. However, I’ll never again prepare garlic noodles without them. I’m pretty sure I’ve made the garlickiest garlic noodles in town when I walk into the kitchen and see my husband licking the tongs clean while going slightly wide-eyed from being caught in the act.

I’m proud to say that this batch of garlic noodles is insanely good after having some of the best garlic noodles on Maui, in San Francisco, and pretty much anywhere else I can find them on the menu. The fact that they can be made in about 15 minutes and mostly consist of pantry and refrigerator staples makes them even better. You can substitute the chuka soba noodles I’m using for ramen, spaghetti, or another type. If you’d like, garnish with sauteed shrimp, crab, lobster, and crispy tofu as well as a squeeze of sriracha.

You could also use regular white wheat noodles or fresh or dried Chinese egg noodles in place of the thin spaghetti that I used for my garlic noodles, which are available everywhere. However, I believe that making my Homemade Egg Noodle Recipe would be the tastiest choice for this dish.

Recently, I’ve been keeping sliced scallions and pressed garlic in a container in the refrigerator, ready to use. A jar of minced garlic in neutral cooking oil, such as canola or grapeseed, would also be useful. You could prepare this ahead of time and use it for dishes like sinangag (Filipino garlic rice) or mashed potatoes.

These are fantastic to have on hand as ready-to-add aromatics to a quick saute of vegetables, to lightly brown with butter before breaking some eggs into the pan, to add to meat or rice, etc. You can also add fried garlic on top if you want even more garlic (please).

Add the cooked, thoroughly drained noodles to the garlic and butter right away. Turn the heat to high, add your prepared sauce, and thoroughly combine the noodles.

Finally, sprinkle the freshly grated parmesan cheese on top and combine everything by giving it one last mix and toss.

  • 16 oz Noodles I used Pancit egg noodles
  • 4 tbsp Unsalted Butter
  • 20 cloves Garlic minced
  • 2 tbsp Oyster Sauce
  • 2 tbsp Fish Sauce
  • 1 tbsp Light Soy Sauce
  • 1/4 tsp MSG
  • 1/2 tbsp Sugar
  • 1/2 cup Parmesan Cheese freshly grated
  • In a small bowl, combine Oyster sauce, Fish sauce, light soy sauce, msg, and sugar. Mix to combine and sugar is dissolved and set aside.
  • Cook noodles 1 minute under package directions and drain well and set aside.
  • In a large pan over medium low heat, melt butter, then add minced garlic and sauté for 2 minutes until fragrant but not browned.
  • Turn the heat up to high, then add cooked noodles and sauce. Mix well until the noodles are combined with the butter, garlic, and sauce and continue cooking for another 1-2 minutes and the noodles are fragrant.
  • Turn the heat to low, then add parmesan cheese and freshly chopped scallions. Mix well to combine and serve immediately!
