When I make spaghetti, there’s usually always leftover noodles. Since I don’t usually eat spaghetti for lunch, I would much rather make a casserole with my leftover spaghetti the next night! In fact, this particular casserole has become so popular in my home that I nearly always buy extra spaghetti with the intention of making it in the coming nights!

You’re almost set if you have leftover pasta and sauce, but if not, it’s simple to prepare some noodles for this casserole.

Start by mixing leftover spaghetti noodles and pasta sauce with an egg, Italian seasoning, Parmesan cheese and ground beef or shredded chicken (note: meat is optional).

Place the spaghetti mixture into a baking dish and bake uncovered for 30 minutes.

Take it out of the oven after 30 minutes, then top with mozzarella cheese and mushrooms and bake for a further 10 minutes. We always include mushrooms because we love them in our home, but for those who don’t, steer clear!
