How To Make Noodles Spicy Without Hot Sauce?

INGREDIENTS ( 1 CUP = 240 ML )
  1. 1 package or 3 oz dry instant ramen noodles (discard the seasoning packet)
  2. 1 tablespoon sesame oil.
  3. 1 tablespoon white part of green onion finely chopped.
  4. 1 teaspoon garlic finely chopped.
  5. 1 teaspoon chili flakes.
  6. 2 tablespoons soy sauce.
  7. ½ teaspoon brown sugar or to taste.

This recipe for Spicy Chili Oil Noodles comes together in just 15 minutes and is so simple to make that it will quickly become a staple in your kitchen. For a hot and flavorful meal, prepare it with any available noodles!

These are the noodles for you if you enjoy spicy food. These noodles are extremely spicy, so don’t say I didn’t warn you.

They are just spicy enough and can be adjusted as necessary to suit your spice tolerance, so don’t let that intimidate you. Love it spicy? Add more chili flakes. Cut the chili flakes in half if you want a milder beginning.

In either case, you’ll be left with mouthwatering Spicy Chili Oil Noodles that are ready in just 15 minutes and are bursting with flavor.

Noodles are tossed in a hot, homemade chili oil sauce as Spicy Chili Oil Noodles. In just 5 minutes, the sauce is prepared in the pan, and the noodles are then tossed with the hot, fatty sauce. The outcome is a delicious, light, spicy sauce that coats the noodles evenly.

This has quickly become a recipe that I add to my weekly meal rotation (along with this tofu stir-fry) because it’s just so damn tasty and simple to make. Additionally, you can make it with any type of noodle you have on hand, including plain spaghetti and that box of macaroni noodles in your pantry. No matter what kind of noodles you use, it will be delicious.

Easy Sweet, Spicy, and Saucy Noodles

  • 2 servings uncooked ramen “bricks” or other noodles of choice (70g each)
  • 1/2 lb extra firm tofu or other protein of choice
  • Chopped cabbage or other veggies
  • Salt to taste
  • 3/4 cup vegetable broth or water
  • 3 to 4 tbsp soy sauce adjust according to desired taste
  • 1.5 tbsp corn starch
  • 2 to 3 tbsp maple syrup or sugar, adjust according to desired sweetness
  • 1/2 tbsp gochujang or kroean chili paste, feel free to sub with other chili sauce and adjust according to desired heat
  • 1 tbsp rice vinegar or other vinegar, adjust according to desired sourness
  • 1/4 tsp ground pepper
  • 1/2 tbsp sesame oil
  • Chopped scallions for topping
  • Sesame seeds for topping
  • Mix all the sauce ingredients in a bowl until well incorporated and set aside.
  • Boil a pot with water. Add in the ramen or other noodles of choice and half cook or cook until still very chewy.
  • While the noodles are cooking, heat a pan. Sauté veggies or tofu in some oil, if using. I pan-fried my tofu until lightly golden brown and crisp. Afterwards, add in the sauce. Leave to simmer over medium heat.
  • Mix the sauce ingrediehts again to make sure the starch doesnt stick to the bottom. Add in the noodles and mix in the sauce* (see notes). Cook over medium high heat until the noodles absorb the sauce and sauce thickens. Season with some salt to taste, if needed.
  • Garnish with sesame seeds and scallions, if desired. Enjoy while hot!

    Cooking Tips for Spicy Ramen Recipe

  • Don’t use the seasoning packet! We only want the ramen noodles, not the MSG seasoning packet it comes with. We will be seasoning the noodles ourselves with plenty of garlic, onion and ginger.
  • Shortcut aromatics: if you hadn’t made it to the grocery store you may substitute the fresh aromatics with 1 teaspoon EACH onion powder, ground ginger, and garlic mixed directly into the sauce.
  • Cook ramen separately: don’t be tempted to cook the noodles with the sauce. The need to be cooked separately in boiling water or the will cook unevenly.
  • Prevent noodles from sticking: if you’re not ready to immediately use the cooked ramen, then toss the noodles in a drizzle of sesame oil to prevent them from sticking together. If you don’t have sesame oil, use a neutral oil such as canola or vegetable oil.
  • Don’t overcook the ramen: the ramen should be undercooked after you boil it in water because the ramen will continue to cook in the sauce. If you completely cook the ramen initially, it will become mushy in the sauce.
  • Customize heat: Spicy Ramen Noodles are meant to be spicy, but they don’t have to be fiery hot. Start with 1 tablespoon Asian chili sauce and add more taste. Remember, you can always add more heat, but you can’t take it away!
