The practice of rinsing cooked noodles under water has become widespread. Noodles should be rinsed to remove the starchy film that causes the sauce to adhere to the noodle. When making a cold pasta salad and stir fry, rinsing your pasta is acceptable. Do not rinse the noodles in this recipe.
I enjoy preparing this meal the day before I intend to eat it. I don’t know what it is about leftover pasta, but it tastes so much better the next day when you microwave it with additional butter and Parmesan.
Put a little olive oil on top if the parmesan cheese absorbs all the butter and your noodles are sticking together.

For this recipe we like to use linguini noodles. They are sufficiently thick to take up the sauce without becoming overly heavy. Egg noodles, spaghetti noodles, and fettuccini noodles are additional options. It would be fun to try rotini or bowtie pasta as well. Try to avoid anything thinner than spaghetti. They will cook way too fast and then get clumpy. Regardless of the type of noodle you use, make sure it’s fully cooked before serving. Because it is simmering at a lower heat, you can’t really follow the instructions on the package.
Add the vegetables around 10 minutes before serving if you want to. You could include vegetables like broccoli, peas, asparagus, etc. It’s entirely up to you whether you make these noodles as a filling meal or a simple side dish.
Just add some chicken to make this a complete meal. Although I prefer adding grilled chicken, you can also include baked, shredded, or pan-fried chicken. Pan-frying the chicken is the best method for maintaining the meal’s “one pot” status. Prior to cooking the noodles, season the chicken with Italian seasoning and cook it in the skillet you’ll be using for the noodles. Then, once the chicken is mostly cooked, remove it from the pan, place it on a plate, and cover it. Make the noodles as directed in the following recipe after cleaning the pan (caution: the pan will be hot). Last but not least, add the chicken to the simmering noodles after a few minutes and continue with the recipe as written.
