What Goes Well With Garlic Noodles?

I usually serve my garlic noodles with a protein like baked salmon, shrimp, tofu, or fried egg. I also like to include a veggie side dish like bok choy, Chinese broccoli, or regular broccoli.

These noodles, adapted from the cookbook “The Wok” by J. Although they are incredibly straightforward and delicious on their own, the noodles made by Kenji Lopez-Alt and based on the dish originally created and served by Helene An at San Francisco’s Thanh Long restaurant can still be dressed up a bit. They pair incredibly well with seafood, so adding some raw, shell-on shrimp to the garlic at the beginning would be a fantastic addition. I’ve started adding a few spoonfuls of tarako, also known as mentaiko, which is Japanese salted pollock roe. Chunks of crab or lobster meat, flying fish roe (tobiko) or salmon roe (ikura) in the style of sushi, or even Western-style caviar (if you’re feeling flush) would all be excellent additions.

I use brown rice spaghetti for this recipe because it is made from rice but has a similar texture to wheat spaghetti. Although rice spaghetti is delicious for this recipe and has an al dente texture and more bite than typical Asian rice noodles, you can really use any kind of noodles.

  • Cook the noodles according to package directions. Once the noodles are cooked, add the garlic and scallions to a large skillet of hot oil and cook for one to two minutes until browned. Then add in the noodles.

    When the noodles are thoroughly coated, add the stir-fry sauce to the pan and toss everything together on medium-high heat.

    It’s optional to top these noodles with sesame seeds and red pepper flakes, and it tastes great. For a vegetarian option, you can also serve this with a sprinkle of parmesan cheese. It may sound strange, but trust me, it’s delicious!

Additionally, because seafood is lighter than chicken or beef and the noodles are rich, I prefer it with seafood. I have had it with shrimp, lobster, and crab. You can serve it with some of my recipes, like my Vietnamese caramelized salmon and my salt and pepper shrimp. As an added bonus, squeeze some lemon juice on top just before serving to counteract the dish’s richness.
