Soaking Rice Noodles in Hot Water

Soaking rice noodles in extremely hot water, or water that has been brought to a boil, is one of the most popular techniques for softening them in advance of adding them to dishes where they will continue to cook. The noodles are either covered with hot water or submerged in hot water.

The thickness and width of your noodles will determine how long you need to soak them. To separate the noodles into strands while they soak, use tongs. To avoid clumping, make sure to stir and separate them frequently.

  • Rice vermicelli noodles – 4 to 6 minutes soaking time – boiling or very hot water
  • Wider flat rice noodles – 5 to 10 minutes soaking time – boiling or very hot water

  • If you add the noodles to the pot of boiling water, the soaking time will be much shorter. Keep a close eye on the noodles, or they will turn to mush!
  • If you know you are going to continue cooking the noodles in a sauce or a dish, then you want to soak them until they are pliable, but not fully soft. They will continue to soften in the dish as it cooks.
  • If you are using the noodles in a cold dish, or any dish where they will not cook any further, you want to soak them until they are soft enough to bite into – in essence, soak them until you think they are the right texture for eating.
  • How to Cook Rice Noodles

The “right” way to prepare dried rice noodles varies. There are several different but comparable techniques, and once you begin making rice noodles fairly frequently, you’ll find the technique you prefer.

Additionally, I’ve observed that some brands of rice noodles soften more quickly than others. If you find a brand you like, stick with it; eventually you’ll learn the ideal amount of time to soak your preferred rice noodles.

The most typical way to prepare dried rice noodles is described below, and is frequently listed on rice noodle packages:

  • Boil a pot of water, then turn off the heat
  • Add rice noodles to the pot, or pour the boiling hot water over the noodles in a wide bowl, covering them completely
  • Swish the noodles around briefly to separate
  • Soak the noodles for 6 to 10 minutes, until tender but still chewy
  • Drain the noodles
  • Rinse briefly under cold water
  • Many home cooks and chefs prefer slightly different techniques.

    Other Cooking Methods:

Hot water, longer soak: Some recipes, like this one for Pad Thai, use hot tap water (not boiling) and soak the noodles for up to 30 minutes. The noodles cook slightly slower, making it less likely theyll get too soft.

Use cold water and soak the noodles for a longer period of time. Even though it may take several hours or longer, you are less likely to end up with overly soggy noodles.

Immediately after a brief boil, immediately rinse the noodles with cold water. Careful with this method, as the noodles can easily over-cook.
